  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the flour and salt to the bowl and mix until well combined.
  4. Stir in the vanilla extract.
  5. Roll the dough into small balls and place them on the prepared baking sheet. Flatten each ball slightly with the palm of your hand.
  6. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  7. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
  8. Transfer the cookies to a wire rack to cool completely.
  9. In a small bowl, combine the shredded coconut and caramel topping.
  10. Spread the coconut-caramel mixture on top of each cookie.
  11. In a microwave-safe bowl, melt the chocolate chips and vegetable oil in 30-second intervals, stirring in between, until smooth.
  12. Drizzle the melted chocolate over the coconut-caramel topping.
  13. Allow the chocolate to set before serving.
