Oatmeal cookies were first made in Scotland and were originally called ‘oat cakes’. They were a popular travel snack for soldiers and sailors.

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the rolled oats, all-purpose flour, baking powder, ground cinnamon, and salt.
  3. In a separate large bowl, mix together the melted butter, brown sugar, and granulated sugar until well combined. Add the egg and vanilla extract, and mix until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the chopped apple, walnuts, and raisins.
  5. Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of a spoon.
  6. Bake for 10-12 minutes, or until the edges are golden brown. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
