Stuffed Grape Leaves Casserole

Rinse the grape leaves under cold water and remove the stems.

In a bowl, combine the rice, chopped tomatoes, diced onion, chopped parsley, chopped mint leaves, olive oil, lemon juice, salt, and pepper.

Place a grape leaf on a flat surface, shiny side down. Spoon about a tablespoon of the rice mixture onto the center of the leaf.

Fold the sides of the leaf over the filling, then roll it up tightly.

Repeat with the remaining grape leaves and filling.

Preheat the oven to 350°F (175°C).

Place the stuffed grape leaves in a casserole dish, seam side down.

Pour water over the grape leaves until they are halfway submerged.

Cover the dish with foil and bake for 45 minutes.

Remove the foil and bake for an additional 15 minutes, or until the grape leaves are tender and lightly browned.

Let the casserole rest for 10 minutes before serving.

Serve hot or at room temperature.
