Strawberry Cupcakes with Lemon Zest Cream Cheese Icing

Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.

Gradually add the flour mixture to the butter mixture, alternating with the milk. Mix until just combined.

Gently fold in the strawberry puree.

Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cupcakes cool in the tin for 10 minutes. Then transfer them to a wire rack to cool completely.

In a medium bowl, beat together the cream cheese, powdered sugar, lemon zest, and lemon juice until smooth and creamy.

Once the cupcakes are completely cooled, frost them with the cream cheese icing.
