Strawberry Chocolate Thumbprint Cookies with White Chocolate Glaze
Thumbprint cookies are believed to have originated in Sweden and are traditionally filled with fruit preserves. This variation adds a delicious twist with the combination of strawberries, chocolate, and white chocolate glaze.

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.

In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, and mix until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped strawberries.

Roll the dough into 1-inch balls and place them on the prepared baking sheet. Use your thumb or the back of a teaspoon to make an indentation in the center of each cookie.

Bake for 10-12 minutes, or until the edges are set. Remove from the oven and use the back of a teaspoon to re-indent the centers if needed.

In a microwave-safe bowl, melt the white chocolate chips and heavy cream together in 30-second intervals, stirring until smooth.

Spoon a small amount of the white chocolate glaze into the center of each cookie.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
