Cut the acorn squash in half and remove the seeds. Slice the squash into 1-inch thick slices.

In a large skillet, heat the olive oil over medium heat. Add the squash slices and cook for 5 minutes on each side, or until golden brown.

In a small bowl, whisk together the apple cider, maple syrup, fresh thyme, salt, and black pepper.

Pour the apple cider glaze over the squash slices and reduce the heat to low. Cover the skillet and let the squash cook for an additional 15 minutes, or until tender.

Remove the skillet from the heat and let the squash rest for 5 minutes.
