Squash Bake
Butternut squash is rich in vitamins A and C, as well as fiber, making it a nutritious addition to any meal.

Preheat the oven to 375°F (190°C).

Cut the butternut squash in half lengthwise, remove the seeds, and peel. Cut into 1-inch cubes.

Heat olive oil in a large skillet over medium heat. Add onion, garlic, thyme, salt, and black pepper. Cook until onion is softened.

In a large bowl, whisk together eggs and milk. Add cooked onion mixture, butternut squash cubes, and shredded cheddar cheese. Mix well.

Transfer the mixture to a greased baking dish. Sprinkle breadcrumbs on top.

Bake for 40-45 minutes, or until the top is golden brown and the squash is tender.
