Truffles are named after the rare and expensive fungi that grow underground. These chocolate truffles resemble the shape and appearance of the fungi, hence the name.

  2. In a separate bowl, mix the coconut cream, instant coffee, Splenda sweetener, cocoa powder, vanilla extract, and salt.
  3. Pour the melted chocolate into the bowl with the mixture and stir until well combined.
  4. Cover the bowl and refrigerate for at least 2 hours.
  5. Once chilled, use a spoon or a small ice cream scoop to portion the mixture into small truffle-sized balls.
  6. Roll each portioned ball between your hands to shape them into smooth truffles.
  7. Place the truffles on a baking sheet lined with parchment paper.
  8. Optional: Dust the truffles with cocoa powder or sprinkle with shaved chocolate.
  9. Refrigerate the truffles for another 1-2 hours to firm up.
