  2. Cook the spinach in boiling water for 2 minutes, then drain and squeeze out any excess liquid. Chop the spinach finely.
  3. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute. Gradually whisk in the milk until smooth. Cook, stirring constantly, until the mixture thickens. Remove from heat and let it cool slightly.
  4. In a large bowl, whisk the eggs. Gradually whisk in the milk mixture. Stir in the chopped spinach, grated cheddar cheese, nutmeg, salt, and pepper.
  5. Grease a souffle dish with butter and pour the spinach mixture into it.
  6. Bake for 25 minutes or until the souffle is puffed and golden.
