Spicy Tomato Bisque with Grilled Brie Toast
The word ‘bisque’ originally referred to a rich, creamy soup made from strained shellfish broth. However, modern bisques can be made with a variety of ingredients, like tomatoes in this recipe.

Spicy Tomato Bisque with Grilled Brie Toast

In a large pot, heat olive oil over medium heat. Add chopped onions and minced garlic. Cook until onions are soft and translucent.

Add tomatoes, vegetable broth, red pepper flakes, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.

Use an immersion blender or transfer the soup to a blender to puree until smooth. Return the soup to the pot and stir in the heavy cream. Simmer for an additional 5 minutes.

While the soup is simmering, preheat the grill or a grill pan over medium heat. Brush the bread slices with olive oil and grill until lightly toasted on both sides.

Remove the bread from the grill and place a slice of Brie cheese on each slice. Return to the grill and cook until the cheese is melted and bubbly.

Serve the spicy tomato bisque with the grilled Brie toast on the side.
