Spicy Carrot, Parsnip and Potato Latkes

Grate the carrots, parsnips, and potatoes. Finely chop the onion.

Place the grated vegetables and chopped onion in a clean kitchen towel or cheesecloth. Squeeze out any excess moisture.

In a large bowl, combine the grated vegetables, onion, egg, flour, cayenne pepper, and salt. Mix well.

Heat the vegetable oil in a large skillet over medium heat.

Spoon the vegetable mixture into the skillet, forming small patties. Fry until golden brown and crispy on both sides.

Remove the latkes from the skillet and place them on a paper towel-lined plate to drain excess oil.
