  1. In a large mixing bowl, dissolve yeast in warm water. Let it sit for 5 minutes until frothy.
  2. Add honey, salt, cinnamon, nutmeg, and melted butter to the yeast mixture. Stir well.
  3. Gradually add flour and knead the dough until smooth and elastic.
  4. Cover the dough with a clean cloth and let it rise in a warm place for 1 hour.
  5. Preheat the oven to 425°F (220°C).
  6. Divide the dough into small pieces and roll each piece into a long rope.
  7. Shape the ropes into pretzel shapes and place them on a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until golden brown.
  9. Remove from the oven and let the pretzels cool for 10 minutes.
  10. Sprinkle with coarse salt.
