In a large bowl, dissolve yeast and sugar in warm water. Let it sit for 5 minutes.

Add salt and flour to the yeast mixture. Stir until the dough comes together.

Knead the dough on a floured surface for about 5 minutes, until it becomes smooth and elastic.

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise for 1 hour.

Preheat the oven to 450°F (230°C). In a large pot, bring water and baking soda to a boil.

Divide the dough into 8 equal pieces. Roll each piece into a long rope and shape it into a pretzel.

Carefully place the pretzels into the boiling water for 30 seconds. Remove them with a slotted spoon and place them on a baking sheet.

Brush the pretzels with melted butter and sprinkle them with salt.

Bake the pretzels for 12-15 minutes, until they turn golden brown.

In a small saucepan, heat milk over medium heat. Add cheddar cheese, mustard, hot sauce, salt, and pepper. Stir until the cheese is melted and the sauce is smooth.
