Preheat the oven to 375°F (190°C).

In a large bowl, whisk together the eggs, milk, salt, and black pepper.

Heat olive oil in a 10-inch oven-safe skillet over medium heat.

Add onion, bell pepper, mushrooms, and spinach to the skillet. Cook until vegetables are softened.

Pour the egg mixture over the cooked vegetables. Sprinkle with cheddar cheese.

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are set and the cheese is melted and golden.

Remove from the oven and let it rest for 5 minutes before serving.
