Preheat the oven to 350°F (180°C).

Place the snickerdoodle cookies on a baking sheet and bake for 10 minutes.

Remove the cookies from the oven and let them cool completely.

Take a scoop of vanilla ice cream and place it on the bottom side of one cookie.

Place another cookie on top of the ice cream and gently press to create a sandwich.

Roll the edges of the ice cream sandwich in cinnamon sugar.

Repeat with the remaining cookies and ice cream.

Place the ice cream sandwiches in the freezer for at least 30 minutes to firm up.
