S’mores Cupcakes are inspired by the classic campfire treat, S’mores, which consists of roasted marshmallows and chocolate sandwiched between graham crackers.

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, mix together the graham cracker crumbs, flour, cocoa powder, baking powder, and salt.
  3. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
  5. Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove the cupcakes from the oven and let them cool completely.
  7. In a small saucepan, heat the heavy cream until it begins to simmer. Remove from heat and pour over the chocolate chips in a heatproof bowl. Let sit for 2 minutes, then stir until smooth.
  8. Spread a layer of the chocolate ganache over each cupcake. Top with mini marshmallows and use a kitchen torch to lightly toast the marshmallows.
  9. Optional: Break a piece of the chocolate bar into smaller pieces and place on top of each cupcake.
  10. Allow the ganache to set before serving.
