Friendship Fruitcake
Friendship Fruitcake is traditionally made by passing along a starter culture, known as a ‘friendship cake starter’, to friends and family.

Preheat the oven to 350°F (175°C) and grease a 9-inch (23 cm) round cake pan.

In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.

In a large bowl, cream the butter and sugar together until light and fluffy.

Beat in the eggs, one at a time, then stir in the vanilla extract, orange zest, and orange juice.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the chopped dried fruits and nuts.

Pour the batter into the prepared cake pan and smooth the top.

Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cake cool in the pan for 10 minutes.

Transfer the cake to a wire rack and let it cool completely.

Once cooled, wrap the cake in plastic wrap and let it rest at room temperature for at least 2 hours or overnight.
