Heat olive oil in a large pot over medium heat. Add the onion and garlic, and cook until softened.

Add the pumpkin, vegetable broth, smoked paprika, cayenne pepper, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.

Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.

Return the soup to the pot and stir in the cheddar cheese until melted.

Stir in the heavy cream and cook for an additional 5 minutes.

Serve hot, garnished with parsley.
