Sig’s Puy lentil and Porcini mushroom burger
Puy lentils, also known as French green lentils, have a distinct peppery flavor and hold their shape well when cooked, making them perfect for burgers.
This is vegetarian, gluten free and high protein recipe. Dish can be prepared in 60 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 15.

Rinse the Puy lentils under cold water. Soak the dried porcini mushrooms in hot vegetable stock for 10 minutes.

Finely chop the onion, garlic, and fresh parsley.

Heat 1 tablespoon of olive oil in a pan and sauté the chopped onion and garlic until soft.

Add the drained lentils, soaked mushrooms (chopped), and vegetable stock. Cook for 15-20 minutes until the lentils are tender and the stock is absorbed.

Transfer the lentil mixture to a large bowl and let it cool for a few minutes.

Add breadcrumbs, egg, chopped parsley, salt, and black pepper. Mix well to combine.

Shape the mixture into 4 patties and place them on a baking tray lined with parchment paper.

Preheat the oven to 180°C (350°F) and bake the patties for 15 minutes.

Heat 1 tablespoon of olive oil in a pan and fry the patties for 2-3 minutes on each side until golden brown.

Toast the burger buns and assemble the burgers with lettuce, tomato slices, lentil patties, and a dollop of mayonnaise.
