Shortcut Pierogies
Pierogies are a traditional Polish dish that can be traced back to the 13th century. They are often served during holidays and special occasions.

Boil the potatoes until tender. Drain and mash them.

In a mixing bowl, combine the mashed potatoes, flour, butter, salt, and pepper. Knead until a smooth dough forms.

Roll out the dough on a floured surface and cut out circles using a round cookie cutter.

Place a spoonful of the potato filling in the center of each circle. Fold the dough in half to form a half-moon shape and seal the edges.

Bring a large pot of salted water to a boil. Cook the pierogies in batches for about 3-4 minutes, until they float to the surface.

In a separate pan, melt the butter and sauté the onion until golden brown.

Serve the pierogies with sautéed onions and a dollop of sour cream.
