Butternut Squash, Caramelized Onion and Spinach Lasagna

Preheat the oven to 375°F (190°C).

Peel and dice the butternut squash.

In a large skillet, heat olive oil and butter over medium heat. Add the diced onion and cook until caramelized, about 10 minutes.

Add minced garlic and cook for an additional 2 minutes.

Add the diced butternut squash and cook until tender, about 10 minutes.

Add the spinach and cook until wilted. Season with salt, black pepper, dried oregano, and dried basil.

In a separate bowl, mix together ricotta cheese, parmesan cheese, and half of the mozzarella cheese.

In a baking dish, layer lasagna sheets, butternut squash mixture, and cheese mixture. Repeat the layers until all ingredients are used, ending with a layer of lasagna sheets.

Top with the remaining mozzarella cheese.

Cover the baking dish with foil and bake for 30 minutes.

Remove the foil and bake for an additional 15 minutes, or until the cheese is golden and bubbly.

Let the lasagna rest for 15 minutes before serving. Enjoy!
