Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.

In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg, vanilla extract, and milk.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the shredded coconut.

Drop rounded spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 10-12 minutes, or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
