Preheat the oven to 350°F (175°C).

In a food processor, combine the all-purpose flour, cold butter, shredded cheddar cheese, sesame seeds, and salt. Pulse until the mixture resembles coarse crumbs.

Add water, one tablespoon at a time, and pulse until the dough comes together.

Transfer the dough onto a lightly floured surface and knead it a few times to bring it together.

Roll out the dough to a thickness of about 1/8 inch.

Using a cookie cutter or a sharp knife, cut out desired shapes.

Place the crackers on a baking sheet lined with parchment paper.

Bake for 10-12 minutes, or until golden brown.
