Preheat the oven to 180°C (350°F).

In a mixing bowl, cream the butter and caster sugar together until light and fluffy.

Gradually add the plain flour, currants, mixed peel, and ground cinnamon to the bowl, mixing well after each addition.

Beat the egg in a separate bowl and then add it to the mixture. Stir until the dough comes together.

Roll out the dough on a lightly floured surface to a thickness of about 1cm.

Use a cookie cutter to cut out biscuit shapes and place them on a greased baking sheet.

Brush the biscuits with a little milk.

Bake in the preheated oven for 12-15 minutes, or until golden brown.
