In a large bowl, combine the summer squash, flour, baking powder, salt, black pepper, garlic powder, and dried basil.

In a separate bowl, whisk together the eggs, milk, and olive oil. Pour the wet ingredients into the dry ingredients and stir until just combined.

Fold in the shredded cheddar cheese and chopped fresh parsley.
