Preheat the oven to 350°F (175°C) and grease a loaf pan or muffin tins.

Grate the carrots and set aside.

In a large bowl, combine the flour, baking powder, cinnamon, and salt.

In a separate bowl, whisk together the vegetable oil, sugar, eggs, and vanilla extract until well combined.

Gradually add the wet ingredients to the dry ingredients and mix until just combined.

Fold in the grated carrots and pecans.

Pour the batter into the prepared loaf pan or muffin tins.

Bake for 40-45 minutes for a loaf or 20-25 minutes for muffins, or until a toothpick inserted into the center comes out clean.
