  1. In a food processor, pulse the flour and salt. Add the butter and pulse until the mixture resembles coarse crumbs. Gradually add the ice water and pulse until the dough comes together.
  2. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  3. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  4. On a lightly floured surface, roll out the dough into a 12-inch (30 cm) circle. Transfer the dough to the prepared baking sheet.
  5. In a bowl, mix together the olive oil and minced garlic. Brush the mixture over the dough.
  6. Slice the tomatoes and arrange them on top of the dough, leaving a 2-inch (5 cm) border. Sprinkle with fresh basil leaves.
  7. Fold the edges of the dough over the tomatoes, pleating as necessary.
  8. Sprinkle the mozzarella and Parmesan cheese over the tomatoes.
  9. Brush the edges of the dough with beaten egg.
  10. Bake for 35 minutes, or until the crust is golden brown.
  11. Let the galette rest for 10 minutes before serving.
