In a large pot, heat olive oil over medium heat. Add onions and garlic, and cook until translucent.

Add potatoes, carrots, parsnips, vegetable broth, thyme, bay leaves, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes or until vegetables are tender.

While the soup is simmering, preheat the oven to 425°F (220°C).

In a large bowl, whisk together flour, baking soda, and salt. Stir in buttermilk and honey until a sticky dough forms.

Turn the dough out onto a floured surface and knead lightly. Shape into a round loaf and place on a baking sheet.

Bake for 25-30 minutes or until the bread is golden brown and sounds hollow when tapped on the bottom.

Remove the bread from the oven and let it cool for 10 minutes before slicing.
