In a large bowl, cream together the butter and sugar until smooth.

Beat in the egg and vanilla extract.

In a separate bowl, whisk together the flour, baking powder, and salt.

Gradually add the dry ingredients to the butter mixture, mixing well after each addition.

Divide the dough into two equal parts and shape each part into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper.

Roll out each dough disk on a lightly floured surface to about 1/4 inch thickness.

Use cookie cutters to cut out desired shapes and transfer them to the prepared baking sheets.

Bake for 8-10 minutes, or until the edges are lightly golden.

Allow the cookies to cool on the baking sheets for a few minutes, then transfer to wire racks to cool completely.
