  1. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until well combined.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  6. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. On a lightly floured surface, roll out one disk of dough to 1/4 inch thickness. Cut out desired shapes using cookie cutters.
  8. Transfer the cut-out cookies to the prepared baking sheet, leaving space between each cookie.
  9. Repeat with the remaining dough.
