Roasted Mushroom Salad
Mushrooms are not technically vegetables but belong to the fungi kingdom. They are low in calories and a good source of vitamins and minerals.

Preheat the oven to 400°F (200°C).

Clean the mushrooms and cut them into quarters.

In a bowl, toss the mushrooms with olive oil, balsamic vinegar, salt, and black pepper.

Spread the mushrooms on a baking sheet and roast for 15-20 minutes until golden brown.

In a large salad bowl, combine the mixed greens, cherry tomatoes, and sliced red onion.

Once the mushrooms are roasted, let them cool for 5 minutes.

Add the roasted mushrooms to the salad bowl and toss gently.
