In a mixing bowl, combine the ricotta cheese, eggs, all-purpose flour, milk, sugar, vanilla extract, and salt. Whisk until smooth.

Heat a non-stick skillet over medium heat and melt 1 tablespoon of butter.

Pour 1/4 cup of the batter into the skillet and swirl to create a thin pancake.

Cook for 2-3 minutes until the edges start to brown, then flip and cook for another 1-2 minutes.

Repeat with the remaining batter, adding more butter to the skillet as needed.

In a small saucepan, heat the mixed berries and sugar over medium heat until the berries soften and release their juices.

Remove the blintzes from the skillet and transfer to a serving plate.

Spoon the berry topping over the blintzes and dust with powdered sugar.
