Preheat the oven to 180°C (350°F).

In a saucepan, cook the rhubarb with sugar over medium heat until soft. Set aside to cool.

In a mixing bowl, beat the eggs and melted butter together. Gradually add the flour and mix until well combined.

Press the dough into a tart pan and bake for 15 minutes.

Once the tart crust is cooked, spread the rhubarb curd evenly over the crust.

Bake for another 15 minutes until the curd is set.

Allow the tart to cool for at least 1 hour.

Top with fresh berries before serving.
