  1. Preheat the oven to 180°C.
  2. Roll out the pie crust and press it into a tart pan.
  3. In a mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
  4. Spread the cream cheese mixture evenly over the pie crust.
  5. Arrange the fresh mixed fruits on top of the cream cheese.
  6. Bake in the preheated oven for 25 minutes.
  7. Remove from the oven and let it cool for 1 hour.
  8. In a small saucepan, heat the apricot jam until melted.
  9. Brush the melted apricot jam over the fruit tart.
  10. Serve and enjoy!
