Preheat the oven to 350°F (175°C).

In a medium bowl, combine the all-purpose flour, rolled oats, brown sugar, ground cinnamon, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

Press half of the mixture into the bottom of a greased 9x9-inch baking dish.

In a saucepan, combine the rhubarb, granulated sugar, cornstarch, water, and vanilla extract. Cook over medium heat until the mixture thickens, stirring constantly.

Pour the rhubarb mixture over the crust in the baking dish.

Sprinkle the remaining crumb mixture over the top.

Bake for 40 minutes, or until the top is golden brown.

Allow the rhubarb crunch to cool for 10 minutes before serving. Serve warm or at room temperature.
