Rhubarb and Strawberry Trifle
Trifle is a traditional British dessert that dates back to the 16th century. It was originally made with cream, sugar, rosewater, and ginger, and was often served in a decorative glass bowl.

Preheat the oven to 180°C (350°F).

Cut the rhubarb into 2cm (8in) pieces and place in a baking dish.

Sprinkle the caster sugar and vanilla extract over the rhubarb.

Roast in the oven for 10 minutes or until the rhubarb is tender.

Remove from the oven and let it cool.

In a trifle dish, layer the sponge cake, custard, rhubarb, and strawberries.

Repeat the layers until all the ingredients are used.

Top with whipped cream and garnish with mint leaves.

Cover and refrigerate for at least 1 hour.
