Renaissance Stuffed Mushrooms
Renaissance stuffed mushrooms originated during the Italian Renaissance period. They were a popular dish among the nobility and were often served during elaborate feasts.

Preheat the oven to 375°F (190°C).

Remove the stems from the mushrooms and set aside.

Heat olive oil in a pan and sauté the onion and garlic until translucent.

Add the spinach and cook until wilted.

In a bowl, combine the sautéed onion, garlic, and spinach with the crumbled feta cheese, breadcrumbs, salt, and black pepper.

Stuff each mushroom cap with the filling mixture.

Place the stuffed mushrooms on a baking sheet and bake for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.

Remove from the oven and let them rest for 5 minutes before serving.
