  1. Cook the jumbo pasta shells according to the package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion, minced garlic, and diced bell pepper. Cook until softened.
  3. Add sliced zucchini and cook until tender. Stir in spinach and cook until wilted.
  4. In a mixing bowl, combine cheddar cheese, ricotta cheese, Parmesan cheese, beaten egg, salt, and black pepper. Mix well.
  5. Preheat the oven to 375°F (190°C).
  6. Stuff each cooked pasta shell with the cheese and vegetable mixture.
  7. Spread a thin layer of marinara sauce on the bottom of a baking dish. Arrange the stuffed shells in the dish.
  8. Pour the remaining marinara sauce over the shells.
  9. Cover the dish with foil and bake for 20 minutes.
  10. Remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.
  11. Let the stuffed shells rest for 10 minutes before serving.
