Raspberry Swirl Cheesecake
Cheesecake is believed to have originated in ancient Greece and was served to athletes during the first Olympic games.

Preheat the oven to 325°F (165°C).

In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan.

In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition.

Pour half of the cream cheese mixture over the crust in the pan. Drop spoonfuls of raspberry jam onto the cream cheese mixture. Swirl the jam into the cream cheese using a knife or toothpick.

Pour the remaining cream cheese mixture over the raspberry swirl. Use a knife or toothpick to create more swirls.

Bake for 55-60 minutes or until the center is set and the top is lightly browned.

Turn off the oven and leave the cheesecake inside for 1 hour.

Remove the cheesecake from the oven and let it cool completely. Refrigerate for at least 2 hours before serving.

Top with fresh raspberries before serving.
