  3. Cut the stacked phyllo pastry sheets into 6 equal squares.
  4. Press each square into a muffin tin to form cups.
  5. Bake the phyllo cups for 8-10 minutes or until golden brown.
  6. In a bowl, mash half of the raspberries with powdered sugar to make a sauce.
  7. In another bowl, whip the cream with vanilla extract until stiff peaks form.
  8. Fill each phyllo cup with a spoonful of raspberry sauce.
  9. Top with whipped cream and garnish with fresh raspberries and mint leaves.
  10. Chill in the refrigerator for 30 minutes before serving.
