Preheat the oven to 350°F (175°C).

Brush each phyllo pastry sheet with melted butter and stack them on top of each other.

Cut the stacked phyllo pastry sheets into 6 equal squares.

Press each square into a muffin tin to form cups.

Bake the phyllo cups for 8-10 minutes or until golden brown.

In a bowl, mash half of the raspberries with powdered sugar to make a sauce.

In another bowl, whip the cream with vanilla extract until stiff peaks form.

Fill each phyllo cup with a spoonful of raspberry sauce.

Top with whipped cream and garnish with fresh raspberries and mint leaves.

Chill in the refrigerator for 30 minutes before serving.
