Cook the quinoa according to package instructions and set aside.

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Pierce the sweet potatoes with a fork and microwave on high for 5 minutes to soften.

In a food processor, combine the cooked quinoa, sweet potatoes, walnuts, onion, garlic, egg, breadcrumbs, cumin, paprika, salt, and black pepper. Pulse until well combined.

Shape the mixture into patties and place them on the prepared baking sheet.

Drizzle the patties with olive oil and bake for 15-20 minutes, flipping halfway through.

Toast the buns and assemble the burgers with lettuce, tomato, avocado, and the quinoa sweet potato patties.
