  2. In a saucepan, bring the vegetable broth to a boil and add the quinoa. Reduce heat, cover, and simmer for 15 minutes.
  3. In a large skillet, heat olive oil over medium heat. Add onion, bell pepper, celery, and garlic. Sauté until vegetables are tender.
  4. Add Cajun seasoning, smoked paprika, and cayenne pepper to the skillet. Stir to coat the vegetables.
  5. Add diced tomatoes, kidney beans, and corn to the skillet. Stir well.
  6. Add the cooked quinoa to the skillet and mix everything together.
  7. Cover the skillet and simmer for 10 minutes.
  8. Season with salt and black pepper.
  9. Garnish with sliced scallions and fresh parsley.
  10. Serve hot and enjoy!
