Quick fried rice

Heat vegetable oil in a large pan or wok over medium heat.

Add chopped onion and minced garlic, and cook until onion becomes translucent.

Add diced carrots and cook for another 2 minutes.

Push the vegetables to one side of the pan and pour beaten eggs on the other side. Scramble the eggs until cooked.

Add frozen peas and cooked rice to the pan. Stir everything together.

Pour soy sauce over the rice mixture and stir well to combine.

Season with salt and black pepper to taste.

Cook for another 2-3 minutes, stirring occasionally.

Remove from heat and let it rest for 5 minutes before serving.
