  1. Preheat the oven to 375°F (190°C). Line a 15x10-inch jelly roll pan with parchment paper.
  2. In a large mixing bowl, beat the eggs and sugar until smooth and well combined.
  3. Add the pumpkin puree and mix well.
  4. In a separate bowl, whisk together the flour, baking powder, cinnamon, ginger, nutmeg, and salt.
  5. Gradually add the dry ingredients to the pumpkin mixture, mixing until just combined.
  6. Pour the batter into the prepared pan and spread it evenly.
  7. Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
  8. While the cake is still warm, dust a clean kitchen towel with powdered sugar.
  9. Invert the cake onto the prepared towel and carefully remove the parchment paper.
  10. Starting from one of the short sides, roll the cake and towel together into a tight spiral.
  11. Place the rolled cake on a wire rack to cool completely.
  12. In a mixing bowl, beat together the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
  13. Gently unroll the cooled cake and spread the cream cheese filling evenly over the surface.
  14. Roll the cake up again, this time without the towel.
  15. Place the pumpkin roll on a serving platter, cover with plastic wrap, and refrigerate for at least 2 hours.
  16. Serve chilled and enjoy!
