Heat olive oil in a large pan over medium heat. Add chopped onions and minced garlic cloves. Sauté until onions turn translucent.

Add chopped tomatoes, bell pepper, zucchini, and eggplant to the pan. Cook for 5 minutes, stirring occasionally.

Stir in artichoke hearts, herbes de Provence, salt, and black pepper. Cover the pan and simmer for 20 minutes.

Remove from heat and let it rest for 5 minutes.
