In a mixing bowl, dissolve yeast in warm water. Let it sit for 5 minutes.

In a separate large bowl, combine flour and salt. Pour in the yeast mixture and stir until a dough forms.

Knead the dough on a floured surface for about 5 minutes until smooth and elastic.

Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for 1 hour.

Preheat the oven to 425°F (220°C). In a large pot, bring water and baking soda to a boil.

Divide the dough into 8 equal pieces. Roll each piece into a long rope and shape into pretzel twists or any desired shape.

Carefully drop the pretzels into the boiling water mixture for 30 seconds, then remove and place on a baking sheet.

Sprinkle pretzels with pretzel salt and bake for 12-15 minutes until golden brown.

In a saucepan, heat beer over medium heat. Gradually whisk in the cheddar cheese until melted and smooth.

Stir in garlic powder, Dijon mustard, paprika, and black pepper.
