In a food processor, combine cornmeal, flour, sugar, and salt. Add butter and pulse until mixture resembles coarse crumbs. Gradually add ice water and pulse until dough comes together. Shape into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

Preheat oven to 375°F (190°C). On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer to a baking sheet lined with parchment paper.
