Instructions

  1. In a food processor, combine cornmeal, flour, sugar, and salt. Add butter and pulse until mixture resembles coarse crumbs. Gradually add ice water and pulse until dough comes together. Shape into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  2. Preheat oven to 375°F (190°C). On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer to a baking sheet lined with parchment paper.
  3. In a bowl, combine nectarines, blackberries, cornstarch, sugar, lemon juice, and vanilla extract. Toss to coat the fruit.
  4. Spoon the fruit mixture onto the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the fruit, pleating as necessary.
  5. Brush the dough with beaten egg and sprinkle with turbinado sugar.
  6. Bake for 35-40 minutes, or until the crust is golden brown and the fruit is bubbling.
  7. Allow the crostata to cool for 30 minutes before serving.
