Potato pancakes, also known as latkes, are a traditional dish in many European cuisines and are often associated with Hanukkah celebrations.

Peel and grate the potatoes. Place them in a clean kitchen towel and squeeze out any excess moisture.

Finely chop the onion.

In a large bowl, combine the grated potatoes, chopped onion, egg, all-purpose flour, salt, and black pepper. Mix well.

Heat vegetable oil in a frying pan over medium heat.

Take a spoonful of the potato mixture and flatten it in your hands to form a pancake shape. Place it in the hot oil.

Fry the potato pancakes for about 3-4 minutes on each side, or until golden brown and crispy.

Remove the pancakes from the pan and place them on a paper towel to remove any excess oil.

Serve the potato pancakes hot with sour cream or applesauce.
