Peel and cube the potatoes. Slice the onions and trim the asparagus.

In a large skillet, heat olive oil over medium heat. Add potatoes and cook until golden brown, about 8-10 minutes.

Add onions and asparagus to the skillet and sauté for another 5 minutes.

In a bowl, whisk together eggs, milk, Parmesan cheese, salt, and black pepper.
