Stir in the tomato sauce, frozen mixed vegetables, and water. Simmer for 5 minutes.

In a greased baking dish, layer half of the cooked rice, followed by the curry mixture. Top with the remaining rice.

Remove the foil and sprinkle the shredded cheddar cheese on top. Bake for an additional 10 minutes, until the cheese is melted and bubbly.
